Server Responsibilities

Note: This was something I wrote as part of training servers for a formal dinner
held in 2007.

Head Server
The basic responsibilities are:

  • On the floor during the entire dinner
  • Directs food server as needed
  • Serving and removal of food for each course
  • Handling other guest food needs as they arise (extra sauce, replacement,etc)

Food Server
The basic responsibilities are:

  • On the floor for the service of food and removal of plates
  • Assists in the kitchen for placing food for food service

There may be a pre-dinner socializing (depending on the space used, which I’m
really hoping to be able to make a final decision on later this week), in which
case the food servers who aren’t on the floor during the dinner, would be on the
floor serving food for the pre-dinner socializing. If that does happen, there will of
course be training and such in that area.

Head Beverage Server
The basic responsibilities are:

  • Serving still and fizzy water as needed to guests (and remembering their
    preference for refills)
  • Overseeing beverage service during the dinner (fizzy and still water)
  • On the floor during the entire dinner
  • Offering cream/sugar during coffee/tea service (all three beverage servers
    will be doing coffee/tea service at the end of the dinner)

Fetcher/Beverage Server
The basic responsibilities are:

  • On the floor for the dinner
  • Replacing napkins, silverware, and glassware as needed during dinner
    service
  • Assisting with water service as needed
  • Assisting with coffee/tea service

Beverage Server
The basic responsibilities are:

  • Assisting with water service during beginning of dinner
  • Preparing coffee and water for coffee/tea service
  • Assisting with coffee/tea service
  • Assists with wine service in third and fourth course:  Preparing and chilling of wines,  Decanting wines and opening bottles for Captain, Assisting in the actual wine service during the third and fourth course

Captain
The basic responsibilities are:

  • Positioned behind the host at the main table
  • Directing all servers
  • Wine service in third and fourth course with assistance from the beverage
    server
  • Responsible for communicating (verbally and non-verbally, through hand
    signals) with servers during dinner
